Spiced Salmon Kebabs

Spice it up...

My husband I both love to eat outside when the weather is nice, especially after having a prolonged "winter" with snow all the way through May!  A few weekends ago, we tried Bon Appetit's Spiced Salmon Kebabs from their Fast, Fresh and Easy section and it was delicious!  Served with basmati rice, and a glass of Viognier from Thumbprint Cellars and it was perfect.

Recipe:
4 servings
Time: 25 minutes (hence, the "Fast," in the Fast, Fresh and Easy)

Ingredients:
2 Tbsp chopped fresh oregano
2 tsp sesame seeds
1 tsp ground cumin
1 tsp kosher salt
1/4 tsp crushed red pepper flakes
1 1/2 lbs skinless salmon fillet (preferably wild), cut into 1-inch pieces
2 lemons, very thinly sliced into rounds
2 Tbsp olive oil

Special Equipment:
16 bamboo skewers soaked in water for 1 hour

Prep:
Prepare grill for medium heat.  Mix oregano, sesame seeds, cumin, salt and red pepper flaxes in a small bowl to combine; set spice mixture aside.

Beginning and ending with salmon, thread salmon and folded lemon slices onto 8 pairs of parallel skewers to make 8 kebabs total.
(Tip: Use two skewers to thread salmon pieces so they don't flip and spin every time you turn them on the grill)

Grill, turning occasionally, until fish is opaque throughout, 5-8 minutes.

{Grilled Rosemary Chick Thighs with a side of Israeli couscous and fresh mango} One of our weeknight favorites comes from Fine Cooking's summer grilling magazine, Grilled Rosemary Chicken Thighs with Sweet & Sour Orange Dipping Sauce . Not only is it fast and easy to prepare, it also goes with many different sides such as grilled vegetables, sweet potato fries and in this case, Israeli couscous with fresh mango.  The orange dipping sauce also has a sweet and savory flavor. Recipe: 4-6 servings Time: 25 minutes  Ingredients: 1 Tbsp plus 1 tsp minced fresh rosemary ( one of my favorite ingredients ) 2 tsp dark brown sugar 2 tsp kosher salt 1 tsp freshly ground black pepper 1 tsp crushed red pepper flakes 2 Tbsp vegetable oil; more for the grill 2-1/2 lb boneless, skinless chicken thighs, trimmed of excess fat  1 cup orange marmalade 1/4 cup rice vinegar Prep: In a small bowl, mix 1 Tbsp rosemary with brown sug

Casual Friday

Sequin Trim Sweatshirt - GAP | Denim Jacket- Intuitions Vintage Gold Bracelet- Grandma Betty | Luna Wrap Bracelet - Stella & Dot Sosie Boots - Ninewest | Tweed Skirt- J.Crew Ready to go "Casual Friday" can mean a lot of different things to a lot of different people depending on your age and profession.  For some, it means denim trousers and a tailored top, others it may mean switching form a shirt and tie to a polo.  For me though, it means layering different pieces of comfortable clothing with  more structured items to create a professional yet casual look.  To accomplish this, I mixed and matched my sequin trimmed sweatshirt with a tailored denim jacket and tweed pencil skirt. Finished with some sparkly accessories, herringbone tights and suede boots, I'm ready to go.
