My husband I both love to eat outside when the weather is nice, especially after having a prolonged "winter" with snow all the way through May! A few weekends ago, we tried Bon Appetit's Spiced Salmon Kebabs from their Fast, Fresh and Easy section and it was delicious! Served with basmati rice, and a glass of Viognier from Thumbprint Cellars and it was perfect.
Recipe:
4 servings
Time: 25 minutes (hence, the "Fast," in the Fast, Fresh and Easy)
Ingredients:
2 Tbsp chopped fresh oregano
2 tsp sesame seeds
1 tsp ground cumin
1 tsp kosher salt
1/4 tsp crushed red pepper flakes
1 1/2 lbs skinless salmon fillet (preferably wild), cut into 1-inch pieces
2 lemons, very thinly sliced into rounds
2 Tbsp olive oil
Special Equipment:
16 bamboo skewers soaked in water for 1 hour
Prep:
Prepare grill for medium heat. Mix oregano, sesame seeds, cumin, salt and red pepper flaxes in a small bowl to combine; set spice mixture aside.
Beginning and ending with salmon, thread salmon and folded lemon slices onto 8 pairs of parallel skewers to make 8 kebabs total.
(Tip: Use two skewers to thread salmon pieces so they don't flip and spin every time you turn them on the grill)
Grill, turning occasionally, until fish is opaque throughout, 5-8 minutes.
